Cauliflower Soup

Ingredients
  • 1 tablespoon olive oil
  • 1 large red onion, chopped
  • 1 big head cauliflower, cut into florets
  • salt and pepper
Instructions
  1. In a large saucepan heat oil, over medium-high heat.
  2. Add onion and cook until golden.
  3. Add ⅔ of cauliflower, and Cook, stirring, for 5 minutes.
  4. Add salt and pepper.
  5. Add water just to cover the florets, and bring to a boil.
  6. Reduce the heat and cook on a medium-low heat for 30 min.
  7. Add the rest of the cauliflower florets, and cook for 15 more min.
  8. Set aside for 5 min, to cool.
  9. With an immersion blender, blend until smooth.
