Whole Grain Spelt Flour Pancakes

Ingredients
  • 1½ cups whole grain spelt flour
  • 2 eggs
  • 1 cup of milk
  • 2 tbsp of coconut oil
  • ¼ cup sugar
  • 2 tbs baking powder
  • ¼ tbs salt
Instructions
  1. Sift the flour and baking powder into a large bowl.
  2. Add the sugar and salt and mix together.
  3. Melt the coconut oil in the microwave.
  4. In a separate bowl mix the eggs, milk and melted coconut oil.
  5. Add the wet ingredients to the dry ones and whisk, just until well combined.
  6. Heat a medium frying pan.
  7. Spoon about 2 tbsp of batter onto the for each pancake.
  8. Cook until bubbles appear on the surface and flip sides.
  9. Keep cooking until pancakes are golden brown, about 2-3 min.
  10. Transfer to a plate.
