Swiss Chard Fritters

Ingredients
  • 630 grams swiss chard
  • 1 cup chopped parsley leafs
  • 2 chopped shallots
  • ½ cup chopped cilantro leafs
  • 2 eggs
  • 2 tbsp plain flour
  • ¼ tsp nutmeg
  • ⅔ tsp salt
  • peper
Instructions
  1. Bring a large pot of salted water to a boil, add the swiss chard and simmer for 8 minutes. Remove from pot and drain well, patting leaves dry with a paper or kitchen towel.
  2. Place chard in food processor with herbs, nutmeg,, salt, pepper, flour and eggs. Pulse until well blended.
  3. Heat a large non stick frying pan over medium-high heat. When the pan is hot, spoon in 1 heaping tablespoon of mixture for each fritter (you should be able to fit two to three fritters per batch).
