Cauliflower Couscous

Ingredients
  • ½ large head of cauliflower
  • 1 red onion, chopped
  • 4 Scallion, chopped
  • ½ cup fresh cilantro, finely minced
  • ½ cup fresh dill, finely minced
  • ¼ cup chopped walnuts
  • 10 dried tomatoes, chopped
  • juice from 1 large lemon (about ½ cup)
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black paper
Instructions
  1. Break the florets away from the rest of the head of cauliflower. Chop the florets into smaller pieces and transfer to a food processor. pulse until you are left with a fine crumble.
  2. Toss the finely chopped cauliflower to a large serving bowl. Add the red onion, Scallions, cilantro, dill, walnuts and dried tomatoes.
  3. Add the lemon juice, olive oil, and and season.
  4. Mix well and serve.
