Break the florets away from the rest of the head of cauliflower. Chop the florets into smaller pieces and transfer to a food processor. pulse until you are left with a fine crumble.
Toss the finely chopped cauliflower to a large serving bowl. Add the red onion, Scallions, cilantro, dill, walnuts and dried tomatoes.
Add the lemon juice, olive oil, and and season.
Mix well and serve.
