Cauliflower Soup

- 1 tablespoon olive oil
- 1 large red onion, chopped
- 1 big head cauliflower, cut into florets
- salt and pepper
- In a large saucepan heat oil, over medium-high heat.
- Add onion and cook until golden.
- Add ⅔ of cauliflower, and Cook, stirring, for 5 minutes.
- Add salt and pepper.
- Add water just to cover the florets, and bring to a boil.
- Reduce the heat and cook on a medium-low heat for 30 min.
- Add the rest of the cauliflower florets, and cook for 15 more min.
- Set aside for 5 min, to cool.
- With an immersion blender, blend until smooth.
