ZUCCHINI NOODLES

Ingredients
  • 2 large zucchini
  • 3 medium tomatoes
  • 1 red bell pepper
  • ½ yellow red pepper
  • 3 cloves Garlic
  • Juice of 1 Lemon
  • 2 tablespoons olive oil
  • ¼ cup walnuts
  • ½ cup chopped coriander leaves
  • 1 tsp dried chili powder
  • salt and pepper
Instructions
  1. Preheat the oven to 180 ° C .
  2. Line a baking pan with parchment paper.
  3. Slice 2 tomatoes to half and place on baking pan.
  4. Slice the peppers to slices and place on baking pan.
  5. Spray the tomatoes and peppers with olive oil, and sprinkle with some salt.
  6. Bake for 25 min.
  7. Add the fresh tomato, baked tomatoes, peppers, garlic cloves, coriander, lemon juice, olive oil, chili powder and salt and pepper to food processor and pulse for 2 minuets or until completely smooth.
