PUMPKIN & CARROT SOUP

Ingredients
  • 1 tablespoons olive oil
  • 500 g pealed and diced Pumpkin
  • 500 g pealed and diced carrots
  • 1 large onion, coarsely chopped
  • 1 teaspoon turmeric
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon ground coriander seeds
  • 1 liter chicken broth
Instructions
  1. Heat the olive oil in a heavy large pot over medium heat. Add carrots, pumpkin, onion, coriander, turmeric, salt and sauté until they begin to brown, about 15 minutes.
  2. Once vegetables have begun to brown, add chicken broth. Cover pot with lid and simmer until carrots and pumpkin are tender, stirring occasionally, about 30 minutes.
  3. Puree soup with an immersion blender until smooth.
