Black beans Azuki Hamburger
Some times the best part about my job is making up great healthy recipes, and if I’m lucky I get to take great pictures of those recipes. So my mission this week was to make an healthy vegetarian hamburger, to a very hungry pregnant girl, how is sick to her stomach just thinking about eating red meat this days.
So I got right in to it and started looking for the perfect vegi burger on pinterest, one thing that I found very difficult to work with, was the fact that although there were all very healthy they had a ton of calories per burger. Which pretty match ruined the all part of benign a suitable option for eating healthy and light. So I started trying all kinda legume burgers, and found the perfect combination of beans to work with, and the result was tasty and light.
- 1 cup cooked black beans
- 1 cup cooked azuki beans
- 30 gr walnuts
- 1 egg
- 1 egg white
- 3 cloves garlic
- 100 grams of tomato paste
- 5 -dried tomatoes
- ½ bunch of fresh parsley
- 1 teaspoon cumin
- 1 teaspoon salt
- ¼ teaspoon allspice
- ¼ teaspoon nutmeg
- 1 teaspoon chili powder
- Add the beans, and all of the ingredients to a food processor.
- Then blitz to a rough paste.
- Chill in the refrigerator for an half of hour to firm up.
- Mean wile Preheat the oven to 180ºC.
- Line a baking pan with parchment baking sheets, and spry with oil.
- Divide and shape the mixture into six equal-sized patties, and place on the baking pan.
- Spry lightly with oil.
- Bake for about 40 minutes or until hamburgers are golden. Remove from oven, and serve.
