You know that feeling when you see a photo on Pinterest and all you want to do is just jump inside it? If you don’t know it you must have a lot of free time, not gazing at Pinterest all day long 😉 I, however, spend a lot of (maybe even too much) time on Pinterest. It inspires me! Gives me tons of ideas! And most importantly introduce me to talented bloggers that I would never get to know by any other way.Last week I stumbled upon such a photo, it was a chocolate brioche in the shape of a muffin, and I just had to copycat it! Seriously this was insanely beautiful, and even though I remembered that baking brioche is challenging, I just had to make me some of these chocolate brioche muffins. I mean who doesn’t like a beautiful muffin for breakfast? And when that muffin is only disguised as a muffin but it’s actually a brioche, oh boy I just had to make me some. So, I made these beautiful vegan chocolate brioche muffins. They were a huge hit, actually, they were so delicious that I had to invite some friends over so I won’t eat them all by myself. These are not the easiest to make, but trust me they are definitely worth the effort of baking them. Now you have to remember that brioche is made of yeast dough and you have to give it time to rise up. The rising process is as important as the kneading part in this pastry.

Turn the dough out onto a lightly floured work surface, and knead for at least 8 minutes. The dough should be elastic, not sticky, and make a nice looking ball.

Place chocolate chips, sugar, cocoa powder, and salt in a small bowl.
-
Heat the milk to boiling point.

-
Making the chocolate brioche
-
Divide dough into two equal pieces. Work with one piece of dough at a time while keeping the rest covered.
-
Roll out one-half in the form of a rectangle of about 12 inch X 8.5 inch (30 cm x 21cm). Put half the filling on the top part of dough leaving 1/2 inch from tom and sides of dough.Fold the dough over the filling (just like a book). Seal all edges well and roll out lengthwise again. Fold in the edges and make a bundle with the dough.
-
Repeat this same procedure with the other half.
-
Take one of the halves of the dough and repeat the process of rolling out and folding. Roll out into a rectangle of one 12 inch X 8.5 inch (30 cm x 21cm) make a roll with it starting with one of the long sides. If you get confused look at this video from the 6 min.
-
Cut into Repeat the procedure with the other dough. Let them stand for about 45 minutes covered with transparent film and in a warm place.
-
Preheat the oven to 175 and bake for 15-20 minutes.

I don’t understand your wording for the shaping of these rolls at all. I’ve understood that you mean to roll out the dough when you say “extend” it, but the placement of the filling? I must be reading it wrong. “The top-right, in the centre”? I don’t get it. And the folding. Are you trying to describe a book-turn for laminated doughs?
Then at the end it says, “Cut into Repeat the process..” Something’s missing.
What was the initial blog post that inspired these?
