Irish Soda Bread

Ingredients

  • 250 gr plain flour
  • 250 gr whole wheat flour
  • 2 tbsp light brown sugar
  • 1/2 tbsp bicarbonate soda
  • 1 large egg
  • 350 ml buttermilk
  • 20 ml vegetable oil
  • 1/2 tsp salt

For the garnish

  • 1 tsp quinoa

Instructions

  1. Pre-heat the oven to 446 ℉/230C. Line a round baking pan 9 unch/23 cm with parchment paper.

  2. Mix the flours, sugar, salt, and bicarbonate soda into a large mixing bowl and stir. Add the egg, buttermilk, and oil, and knead just until the dough comes together.

  3. Form a round loaf of bread and place on a lightly greased parchment paper. With a knife cut a cross on the top and spread some quinoa seeds on top.

  4. Bake for 15 min and lower oven temperature to 200 and bake for another 20-25 min until the loaf sounds hollow when tapped. Cool on a wire rack.
