Amazing Fig Loaf Cake with Pistachio Streusel

Ingredients

  • For the cake:
  • 3/4 cup 5.3 oz/150 gr sugar
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup milk
  • 1 tsp. vanilla extract
  • 1/2 tsp. ground cinnamon
  • Pinch of salt
  • 2 cups 9.8 oz/280 gr all-purpose flour
  • 1/2 cup 1.8 oz/ 50 gr almond meal
  • 2 tsp. 0.35 oz/ 10 gr baking powder
  • 15-20 fresh figs cut into quarters
  • For pistachio streusel:
  • 0.9 oz/25 gr natural peeled pistachios
  • 1.8 oz/ 50 gr all-purpose flour
  • 1.8 oz/ 50 gr cold butter cut into cubes
  • 1/4 cup 1.8 oz/ 50 gr light brown sugar
  • Pinch of salt
  • Confectioners Sugar powder for decoration

Instructions

  1. Preheat oven to 170c degrees and grease the pans.
  2. In a large bowl, mix sugar, eggs, oil, milk, vanilla, cinnamon and salt into a uniform mixture.
  3. Add flour, almond meal, and baking powder and mix until smooth batter forms.
  4. Pour the batter into the pan and place figs quarters at the top.
  5. Pistachio streusel: in a food processor with a steel blade, place pistachios, flour, butter, sugar and salt and blend at high speed for 1-2 minutes or until a crumbly mixture is obtained.
  6. Sprinkle the streusel on the top of the cakes generously.
  7. Bake the cakes for 35-45 minutes or until golden and set.
  8. Cool completely at room temperature, sprinkle with powdered sugar and serve.
