Pumpkin waffles with chilli flakes

Ingredients

  • 2 eggs separated
  • 1 cup + 1 tbsp 150 gr / 5.3 oz plain flour
  • 1 tsp baking powder
  • 2 tbsp white sugar
  • Pinch of salt
  • 1 tsp cinnamon powder
  • 1/4 tsp ground ginger
  • 1/4 tsp ground old spice
  • 1/8 tsp ground clove
  • 1 tsp vanilla extract
  • 1 cup milk I used soy milk
  • 1 tbsp 30 gr / 1 oz coconut oil, melted
  • 240 gr / 8.5 oz pumpkin puree
  • 2 tsp chilli flakes or less if you don't like your waffles to be too spicy

Instructions

  1. Separate egg yolks from whites and put in two different bowls.
  2. Mix together flour, baking powder, sugar, salt, spices, and vanilla. Add 3/4 of the milk, melted coconut oil, pumpkin puree and egg yolks and stir until smooth. Add the rest of the milk.
  3. Whip egg whites until stiff peaks form then carefully fold them into the batter.
  4. Bake in a hot waffle iron (sprinkle in some chilli flakes on each waffle) for a few minutes or until golden brown. Serve with powdered sugar.
