Zucchini Tots

Ingredients

  • 2 large zucchinis shredded
  • 3 large egg
  • 1 small yellow onion diced
  • 8 oz 230 gr ricotta cheese
  • 3/4 cup breadcrumbs
  • ½ teaspoon salt
  • ½ teaspoon pepper

Instructions

  1. Preheat the oven to 400°F. Line a baking pan with parchment paper and set aside.
  2. In a large bawl, mix all the ingredients together.
  3. Scoop 1 tablespoons of mix using a ice-cream scoop or your hands and gently press between your hands into a firm ball then shape into a tater-tot shape. Wash your hands after every few tots to keep them from sticking onto your hands. Place onto the prepared baking sheet.
  4. Bake until golden brown and crispy, about 20 minutes.
