Cauliflower Couscous
Last Saturday was my birthday. Those who know me, know that ever since I could speak, my Birthday was a festival of joy. Also known as “FESTI-NETA”, it all starts about a month before. I start mentioning that my birthday is coming up, and I start make great plans for the up coming event.
I’m only telling you this because apparently there are some (very weird people) that keep their birthday a secret…… As you can understand I am not one of them. I don’t have a sad story how I realized that life is precious, and decided to enjoy every minute. What I will tell you, MY LIFE IS BUSY! And even though I try to have as much fun as I can, sometimes there just isn’t enough time. As I get more mature, I realize that time is running out. I don’t fear that I don’t have enough time on this earth, I just realize that most of my time is spent on a “to do” list, and while that’s o.k, I believe that if we get the chance to celebrate, we should TAKE IT!
So yes I celebrate my birthday every year, and make sure that all the people I love and care about won’t forget that. And yes, I know it’s a little childish, but I love the attention, and I love wearing a tiara for one day of the year (well that’s actually not true, I try wearing my tiara at least one day, every month). All that said and done, I should remind you that not so long ago, two weeks to be exact, I got married. And as I mentioned before, if there’s a reason to party I do. And the wedding events spread over a week and a half…. I mean a bachelorette party, a “CHINA“, the actual weeding day and a weekend of mini-moon.
By the time it was to do all the birthday planning, I was literally out of air for it. So for the first time of my life, I just told all of my great friends and newly wed that this year will keep on a low key and just do nothing…… Can you imagine? Well maybe you can, but newly wed and best friends absolutely couldn’t. So, the party was on the low key and included a birthday brunch, some after noon drinks and a mini gathering party at night. To top it all newly wed took my on a shopping spree a day before the actual birthday, so I woke up to a mountain of shopping bags filled with brand new clothes.
All and all a great birthday! I did what I love the most, and spend the day with loved ones, eating and drinking. I am truly blessed, I must admit. And as always in life, we have to get back to reality, which unfortunately I did. And that means back to real home cooked and healthy food YES! And after the weekend I had, I kinda figured I must make easy and skinny food, cause lets face it I’m no longer at the age that I can just eat what ever I want and keep my figure 😉
So I got in to the kitchen and made the most delicious cauliflower couscous! It’s the easiest in the world to make, it’s very low carbs, and low calorie. Which means I can devour it for lunch and diner, and not waste time counting calories 🙂

- ½ large head of cauliflower
- 1 red onion, chopped
- 4 Scallion, chopped
- ½ cup fresh cilantro, finely minced
- ½ cup fresh dill, finely minced
- ¼ cup chopped walnuts
- 10 dried tomatoes, chopped
- juice from 1 large lemon (about ½ cup)
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black paper
- Break the florets away from the rest of the head of cauliflower. Chop the florets into smaller pieces and transfer to a food processor. pulse until you are left with a fine crumble.
- Toss the finely chopped cauliflower to a large serving bowl. Add the red onion, Scallions, cilantro, dill, walnuts and dried tomatoes.
- Add the lemon juice, olive oil, and and season.
- Mix well and serve.
