Healthy crispy cauliflower fritters a delicious vegetarian dinner alternative!
With all the latkes frying going in my kitchen in the last week, I figured it’s time for a healthier dinner. Not that I don’t love eating fried latkes, the Jewish version of hash browns is one of my favorite dinners, but I really believe that life is all about balance, and eating fried potatoes for 8 days straight is a bit too much in my eyes.Cauliflowers is one of the most underappreciated vegetables, and it’s a shame because you can use it as a staple vegetable in the kitchen, you can bake, fry, and even mush it to get a healthier version of traditional rich in carbs recipes. This crispy healthy cauliflower fritter is the perfect example of how you can use cauliflower to make healthier latkes while keeping the crispy texture of the original recipe. Using only 3 ingredients you can whip up these babies in less than 20 min, another trick you can use is swapping the cauliflower with carrots or zucchinis.

Healthy Crispy Cauliflower Fritters
Ingredients
- 14 oz/400 gr frozen cauliflower defrosted and strained well
- 2 tbsp flour
- 1/2 tsp salt
- 1/8 tsp ground black pepper
- 1 large egg
- Olive oil for frying
Instructions

In a large bowl mash the defrosted cauliflower.

Add in flour, salt, ground pepper, and egg stir well until mixture is smooth.

Heat a nonstick skillet over medium-low heat and lightly coat it with olive oil. Scoop out a tablespoon mound of the cauliflower mixture into the pan, flattening the mounds slightly with a spatula and spacing them at least 1 inch apart.

Cook the fritters for 2 to 3 minutes, flip them once and cook them an additional 1 to 2 minutes until they're golden brown and cooked through. Transfer the fritters to the paper towel-lined plate.
