Sometimes my favorite thing about working from home’ is that I have lots of time for baking experiments in the kitchen. If you have a normal 9 to 5 job, your probably think I’m lucky to work from home. Let me tell you, it’s not all it cracks up to be. I have to make my own work scheduled, I have to take responsibility for every task, and make my own deadlines, I hardly ever make them…… But as I mentioned before, it comes with some benefits. Last week was crazy, and yet I found the time, or should I say, I stole some time off and got into the kitchen to bake some cookies. I try not to do that to often, get into the kitchen in the middle of a working day, but sometimes, just sometimes it helps to get my head back together. I find that baking clears me mind, and makes me so much calmer, that I never consider those work brakes as a waste of time.After less than 45 minutes, I had monster chocolate chip cookies on my table. This are so good, they are crunchy on the outside, and moist on the inside. They make the house smell like heaven, and your stomach sing with joy. You should defiantly try making them at least once!
- 3 cups all purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- 1 ½ teaspoons kosher salt
- 3 tablespoons coconut oil
- 2 ripe bananas, mushed
- ¾ cup light or dark brown sugar
- ¼ cup granulated sugar
- 2 eggs, cold, lightly beaten in a separate bowl
- 1 teaspoon vanilla extract
- 1 cups dark chocolate chips
- ½ cup chopped walnuts and pecans
- Preheat oven to 375°F (190°C) .Line a large baking sheet with a silicon mat or parchment paper. Set aside.
- In a medium bowl, mix together the flour, baking soda, powder, and salt. Set aside.
- In a large bawl with a hand mixer, beat the coconut oil and sugars for 1-2 minutes, or until the sugar dissolves into the oil. Lower the speed to medium-low, and mix in the eggs, mashed bananas and vanilla and beat until mixed .
- Gradually add in the flour mixture, beating until a little flour remains. Fold in the chocolate chips an nuts with a rubber spatula.
- Divide the dough into 20 even pieces. Shape the dough roughly into a ball.
- Place on the prepared baking sheet, spacing 2 inches apart. Refrigerate for at least 30 minutes but up to 10 hours before baking.
- Bake for 15-20 minutes, until light golden brown.
