What can I tell you? Olga as done it again (and truly I’m not even surprised this time). This super fudgy chocolate brownie with lemon curd are going to make the weekend so much sweeter, you can actually get diabetes 😉There is so little to tell about this recipe, and seriously every word is wasted by you reading it instead of making the brownies. They are so delicious (and I know I say it about every recipe I post to the blog), if you love chocolate this babies are going to be your weekend super chocolate dose. And if you are anything like me and you like sweet and tart together, than your going to go even crazier for this one.What are you still doing here? Head to the kitchen, you have to make this babies, NOW!!
- For The Lemon Curd:
- 1 egg
- 2 egg yolks
- 100 gr (1/2 cup) sugar
- 120 ml (8 tbsp) lemon juice
- 1 tbsp cornflour
- For The Brownies:
- 150 gr (5 oz) butter
- 150 gr (5 oz) semi sweet dark chocolate
- 2 eggs
- 200 gr (1 cup) sugar
- 35 gr (1/4 cup) cocoa powder
- 70 gr (1/2 cup) flour
- ¼ tsp salt
- Preparing the lemon curd: Whisk egg, egg yolks, sugar, lemon juice and cornflour in a saucepan until smooth, then place pan over a low heat. Keep whisking continuously until thickened. Remove from heat and let rest.
- Preparing the brownies: Preheat oven to 175°c (350°F). Line a 20x20 cm (8x8 inch) pan with parchment.
- Melt the butter.
- Add the eggs and sugar and whisk together.
- Add the coco powder, flour and salt and fold in using a spatula, until incorporated.
- Pour the brownie batter into the pan.
- Using a spoon pour small heap of lemon curd onto the brownie batter. With a wood skewer swirl the batter till a marble look is formed.
- Bake for 20-30 min or till brownies to begin to crust and crack, but still moist inside.
- Let cool and serve.
- You can keep cut brownies in a closed container in the fridge for up to a week.

I made these yesterday for a friends birthday. Was my first time making brownies from scratch and first time making lemon curd. Messed up the first try making the batter, basically made scrambled butter and eggs, but got it right the second time. They are BOMB!!! I could eat the lemon curd by its self! I bookmarked your recipe and definitely plan on making it again!!
