I had the craziest weeks, I started a new project that made the days fly away. The thing about new projects is they are time-consuming, I love it but it’s really hard to find time for yourself with all the excitement and work. One of my biggest problems during hectic times is finding time to eat properly. You wake up early and before you notice it’s lunch time. I just have to have breakfast, but with time pressing it’s really hard to fix myself something that is other than a bowl of sugary cereal and yogurt.Overnight oats is a great solution for breakfast, you mix everything in less than a minute, let it soak in the fridge for the night and you get a quick fix breakfast. My favorite part is you can top it with whatever you’d like and eat it on the go. If you like breakfast on the go as much as I do, this recipe is a defiant keeper.
Overnight oats recipe
Ingredients
- 1 cup rolled oats
- 1.5 cups whole milk you can make it vegan by using non-dairy milk
- 2 tbsp honey
- 1/4 tsp salt
- For the topping
- Strawberry jam
- Raw cacao nibs
- Pistachios
Instructions

In a mixing bowl combine the oats, milk, honey, and salt. Stir well to combine. Put in two separate jars or one big one - and refrigerate overnight or for at least 6 hours.

Remove from the fridge, give a good stir, and top with strawberry jam, raw cacao nibs, and pistachios. You can even heat it up if you'd like.
