In the past few weeks I have been ….. well there isn’t a single word to describe it. I was preoccupied, distracted, “not here” and the worse thing is, I was all over and no where at the same time. Some times I just get lost in my work, I mean having a ton of unfinished tasks on your desk would do that to a person. But this was different, this was like being somewhere but not being present. Truth be told, I have been contemplating some heavy decisions about my business.
Nothing any woman, who is a business owner haven’t been through before, the thing is that when you have to make the decisions concerning your business and life, it feels like some one is asking you to chose your favorite child (I guess, cause I don’t have any yet). I wonder if it ever gets any easier? I don’t think my parents had to deal with so many decisions when they were my age. I think back than it was much more simple, you grew up, went to collage, found a job and just stayed at that job for years and years. If by some wired and unexpected way, you lost your job, you just go and find the same occupation at a different company.
I am 35 years old. I have already manged to graduate and get my B.Sc in two majors, and like that wasn’t enough I continued to graduate school to do a masters. I took endless amount of courses, that helped me to be the great dietitian that I am today, and still I have a feeling that I still didn’t accomplished enough. You can call it the Y generation syndrome, or label it what ever the hell you want. But when it comes down to reality, I thing that having all the possibilities that I had, just made me much more confused, and as a result made the last couple of weeks, so unbearable to me.
There is a bright side to it though, I did mange to make this really great low fat and low calorie Swiss Chard Fritters 😉 Who knows maybe one day I’ll be a chef or a professional food photographer. Until I figure it out, I urge you to make this fritters. They just made the last weeks so much easier and tastier.

- 630 grams swiss chard
- 1 cup chopped parsley leafs
- 2 chopped shallots
- ½ cup chopped cilantro leafs
- 2 eggs
- 2 tbsp plain flour
- ¼ tsp nutmeg
- ⅔ tsp salt
- peper
- Bring a large pot of salted water to a boil, add the swiss chard and simmer for 8 minutes. Remove from pot and drain well, patting leaves dry with a paper or kitchen towel.
- Place chard in food processor with herbs, nutmeg,, salt, pepper, flour and eggs. Pulse until well blended.
- Heat a large non stick frying pan over medium-high heat. When the pan is hot, spoon in 1 heaping tablespoon of mixture for each fritter (you should be able to fit two to three fritters per batch).
