Sometimes, all you need is a simple recipe. This zucchini tots, are just that! I usually make this, as an emergency healthy snack. You can keep them in the fridge for up to a week, and they are so delicious. Even A. that really dislikes zucchinis loves them, and that by me is a solid proof of how wonderful they are. I wish zucchini season never passes!Like always, my weeks are crazy, and having this zucchini tots in the fridge is a life saver. I even found that I can put them in a zip-lock, and take them with me to the gym as between classes snack. I get really hungry when I teach more than one lesson consecutively.I just love posting easy and healthy recipe. Hope you enjoy this as much as I do. Zucchini Tots
Ingredients
- 2 large zucchinis shredded
- 3 large egg
- 1 small yellow onion diced
- 8 oz 230 gr ricotta cheese
- 3/4 cup breadcrumbs
- ½ teaspoon salt
- ½ teaspoon pepper
Instructions

Preheat the oven to 400°F. Line a baking pan with parchment paper and set aside.

In a large bawl, mix all the ingredients together.

Scoop 1 tablespoons of mix using a ice-cream scoop or your hands and gently press between your hands into a firm ball then shape into a tater-tot shape. Wash your hands after every few tots to keep them from sticking onto your hands. Place onto the prepared baking sheet.

Bake until golden brown and crispy, about 20 minutes.
