Hey there! Well, as much as I tried posting when I was away…. Honey mooning and Thailand kinda got in the way 🙂 I do intend to post all about our vacation and all the fun stuff that you can do when in Thailand and Cambodia, and of course about all the great food that we ate. But till I get back to the harsh reality of not being on vacation anymore, I decided to procrastinate and just indulge myself with comfort food.
Being on vacation is like disconnecting from everything you know. You get to forget all the hardship that life has to offer you, and all your problems back at home. Don’t get me wrong, I don’t have big problems and my life is fairly fun and easy going. It’s just that being away from the day to day reality, and transforming to a free spirit traveler, that my friends is the best vacation you can ask for. When the only worry you have, is what your going to eat for dinner and where. When you get up in the morning with no plans non so ever, and all you have to do is decide where you want to spend your day, by the pool or on the beach. It can’t get much better than that, I tell you. Now, getting back from that is quite challenging. I never thought about it before, but I’ve been back for 5 days and it’s like I landed in an ultra reality. I walk the streets, and everything seams to move slower. Talking on the phone, is like an outer body experience, and meeting people I love is like meeting with people that i didn’t see for years. We only been away for 4 weeks, and yet life here seamed to stay hectic while we just slowed down.
I guess that in the next few days we’ll keep up with everybody else, and start joining the rush of work and life itself. But till that moment comes, I try to enjoy the new slow mode that surrounds me. I do wish it wont change, but living in Israel, you don’t really get to relax a lot. I would love to be able to relax and slow down in my every routine day, thinking about it, may be that should be one of my new goals in life.
In the mean while, I can enjoy the little oblivious bliss that I feel waking up in the morning. And that bliss manifested it self, in this perfect light dish of zucchini noodles I made yesterday. This one has to be one of my new favorites, having almost zero calories and tasting like heaven. If you don’t have a spirolizer at home yet, you can find the one that I love the most here.

- 2 large zucchini
- 3 medium tomatoes
- 1 red bell pepper
- ½ yellow red pepper
- 3 cloves Garlic
- Juice of 1 Lemon
- 2 tablespoons olive oil
- ¼ cup walnuts
- ½ cup chopped coriander leaves
- 1 tsp dried chili powder
- salt and pepper
- Preheat the oven to 180 ° C .
- Line a baking pan with parchment paper.
- Slice 2 tomatoes to half and place on baking pan.
- Slice the peppers to slices and place on baking pan.
- Spray the tomatoes and peppers with olive oil, and sprinkle with some salt.
- Bake for 25 min.
- Add the fresh tomato, baked tomatoes, peppers, garlic cloves, coriander, lemon juice, olive oil, chili powder and salt and pepper to food processor and pulse for 2 minuets or until completely smooth.
- Using the spirolizer, spiralize the zucchinis.
- Add the sauce to the zucchini noodles and serve.
